Lauren and I met on Twitter and I loved all her posts about working out. That’s why I asked her if she would like to write a guest post for my blog and I was lucky because she immediately said yes! Hope you will enjoy it.

It’s Lauren here from laurenhollie.com! I’m here to share with you a ‘What I Eat in a Day’: Plant Based edition. I want to start off by saying that my diet is not yet 100% plant based and I have been making swaps since September last year. It’s a journey and a work in progress! Whatever your reasons are for wanting to eat more of a plant based diet, simply reducing the amount of animal based food you have in your diet will make a difference.

This recipe was inspired by @stephelswood but I’ve changed it a bit to make it my own. They make the fluffiest, tastiest pancakes every time, and you can top them with whatever you like!

This recipe is also from Steph (I’ve linked her eBook at the end of this post) but I decided to coat the tofu in breadcrumbs so it felt more like a chicken goujon haha! They were delicious and I really need to make them again. A little messy, but worth it! And you don’t have to use brown rice, you can use any.

Roasted Butternut Squash stuffed with sweetcorn, quinoa, spinach, butter beans, pinto beans. Again, you can change the fillings to be whatever you fancy!

This is a classic and I love it even more now I’ve started making my own hummus (it’s super easy).

These are also a fairly recent discovery, and you just put them in the fridge to set after mixing all the ingredients together so you can’t really go wrong! There’s loads of different versions online. 


This is one of my favourite snacks because it’s quite light (so you can eat more hehe) and again there’s loads of choices!
